Recently I have been craving a good sandwich. My favorite has to be grilled veggies with some creamy dressing. So tonight I gave into my craving and made myself one for dinner. I am pretty picky when it comes to grilled vegetables because I do not like anything too soggy.
I chose to use some small red peppers, eggplant, tomatoes, and shiitake mushrooms. First, I grilled the peppers, eggplant, and mushrooms in a frying pan with coconut oil. I wanted to get them a little golden brown before I grilled them in my pita bread. I added a little garlic to the mix for flavor.
Once the veggies were a little toasted, I put them on the pita bread and added some Annie's Naturals Lite Goddess dressing. It is vegan and gluten free, but you definitely cannot tell because it is so delicious.
